Lower Calorie Skillet Chicken

This Lower Calorie Skillet Chicken is very easy, full of flavor and completely cooked in a skillet. Instead of the typical way of smothering chicken in thick breading and deep frying it, this chicken is lightly browned in olive oil and finished cooking in chicken broth…so tender, moist and tasty! The parsley and other ingredients give the chicken a great flavor! Even my grandchildren liked this one!

Ingredients – Picture shows beef broth but use chicken broth. I grabbed the wrong can and forgot to take a new picture with chicken broth.

Pound the chicken until all of it is about 1/4″ thick. My chicken breasts were large so after pounding them, I also cut them in half.

In a bowl mix the dry ingredients.

Coat the chicken in dry ingredients shaking off the excess.

In a large skillet, heat olive oil over medium heat until hot. Add chicken and lightly brown on both sides.

Add chicken broth and cook 4-5 minutes on each side (8-10 minutes total) or until no longer pink inside. Be careful not to over cook or it will be dry. All of the liquid will pretty much be gone by the time the chicken is cooked though.

Ingredients

4 chicken breasts

1/4 cup flour

1/4 tsp salt

1/4 tsp pepper

2 Tbl olive oil

1/4 tsp garlic powder

3 Tbl dried parsley

1/2 cup chicken broth

Directions

Pound chicken evenly to about 1/4″. It is easier to do this between two pieces of plastic wrap. In a bowl, mix flour, salt, pepper, garlic powder and parsley. Toss chicken in the mixture shaking off any excess. Heat olive oil in a large skillet over medium heat. Lightly brown chicken on both sides. Add chicken broth and cook 4-5 minutes each side (8-10 total) or until chicken is no longer pink. Do not over cook or it will be dry.
