Microwave Sliced Potatoes

Do you need a quick and easy potato to fix for dinner? Try these Microwave Sliced Potatoes! The taste is fabulous and they are perfectly cooked every time. The combination of the herbs with the butter and two kinds of cheese…YUM! I used fresh herbs this time because they are growing in my garden. In the winter I use dried herbs instead. Either one tastes great!

Ingredients

Slice the potatoes with the wooden spoon

handle in front of the potato to stop you

from cutting through the potato all the

way. Don’t worry if you do slice through

though, because as you see in the picture,

I sliced through one. They will taste the

same if you cut through one I promise!

Place the potatoes in a microwave safe

dish big enough to keep the potatoes

from falling apart.

Using a spoon, drizzle the melted butter

over the slices pulling the slices apart

slightly so the butter gets in better.

Sprinkle the potatoes with the herbs.

Microwave on high for 10 minutes, turning

halfway through if your microwave

does not rotate when it cooks.

Let sit for 5 minutes in the microwave.

Carefully remove and sprinkle on

both kinds of cheese.

Microwave on high another 3-5 minutes

or until the cheese is completely melted.

Sprinkle with salt and serve.

 

Microwave Sliced Potatoes

Ingredients

  • 2 large potatoes, washed and peeled
  • 1/2 tsp salt
  • pinch pepper
  • 1/4 cup melted butter
  • 1-2 Tbl fresh chopped herbs (or 1-2 tsp dried herbs)  example: thyme-parsley-chives
  • 2 Tbl shredded cheddar cheese
  • 1 Tbl grated parmesan cheese

Directions

  1. Place potatoes on a cutting board. Place a wooden spoon handle in front of the potato. Slice through the potato being careful not to slice all the way through the potato. That’s where the spoon handle helps. It stops you from cutting all the way through.
  2. Place the sliced potatoes in a microwave safe dish that is just big enough to keep potatoes from falling apart.
  3. Use a spoon and drizzle melted butter over potato slices getting it in between the slices.
  4. Sprinkle potatoes with chopped herbs. Microwave on high for 10 minutes, rearranging the potatoes after 5 minutes.
  5. Let the potatoes rest in the microwave for another 5 minutes.
  6. Sprinkle with both kinds of cheese.  Microwave on high for another 3-5 minutes or until the cheese melts and the potato is cooked through.
  7. Salt the potatoes and serve.

  1. I’ll definitely try it this way in the winter. Warmer times, I often grill part of a week’s worth of meat – a lot less than it was when I was younger and heavier. Followed by a roast or something chunky to slow cook on the falling fire. Might try putting this in for part of that falling fire-time.

    Quick-read thermometers are a necessity of life.

  2. I liked the way the potatoes tasted. My problem, the bottoms of the potato where they weren’t cut was hard and tough. Any suggestions?

    • Is it possible you didn’t cut far enough down? If the bottom was too thick it may not have cooked properly. I cut them far enough just to keep them from falling apart, however, as in my picture I tend to cut all the way through…lol I hope this helps!
