Seven Layer Casserole

Cheesy bacon goodness on top of so many different flavors that go great together! I love making and eating casseroles. I like being able to clean up all the dishes so that when it comes time to eat…there aren’t many left to do! I also like eating casseroles as leftovers. Why is it they taste even better the next day? This is so easy and fun to put together and absolutely delicious!

Ingredients

In a large pan cook the hamburger, chopped onion and chopped celery.

Layer 1: In a 3 quart oven safe dish, put rice on the bottom mixed well with the corn. Add half the salt & pepper.

Layer 2: Heat beef broth to boiling (I just microwaved it) and carefully pour over rice and corn.

Layer 3: Mix tomato sauce with Worcestershire sauce and Italian seasoning. Pour half of the tomato sauce mixture on top evenly.

Layer 4: Spoon all of the hamburger mixture on top with half the salt and pepper.

Layer 5: Add remaining tomato sauce mixture.

Bake with a lid in a preheated 375 degree oven for 45 minutes.

Layer 6: Remove from the oven, remove the lid and add the cheese evenly.

Layer 7: Add the cooked bacon pieces. Place back in the oven without a lid for 5 minutes or until the cheese melts.

Let cool 5-10 minutes before serving.

1# ground beef

1/2 cup chopped onion

1/2 cup chopped celery

1 cup uncooked rice

1 can (11-16 ounce) whole kernel corn

1 tsp seasoned salt

1/4 tsp pepper

1 cup beef broth

16 oz tomato sauce

1 tsp Worcestershire sauce

1 tsp Italian seasoning

2 cups shredded cedar cheese

3/4 cup bacon pieces, cooked and chopped small

Directions

Preheat oven to 375 degrees. In a large fry pan over medium heat, cook ground beef with onion and celery until ground beef is no longer pink. Set aside. In a 3 quart oven safe dish add rice mixed with corn and half of the salt and half of the pepper. Heat beef broth to boiling (I used the microwave) and carefully pour over the corn. In a small bowl, mix tomato sauce with Worcestershire sauce and Italian seasoning. Pour half of the tomato sauce mixture over the corn. Spread the all of hamburger mixture on top with remaining salt and pepper. Top with the remaining tomato sauce mixture. Bake with a lid for 45 minute. Remove from the oven, carefully remove the lid and sprinkle on the cheese. Top with bacon. Put back into the oven for an additional 8 minutes. Allow to cool for 5-10 minutes before serving.
