Macaroni Salad

Macaroni Salad is good anytime but especially when having a cookout and a picnic. I like making it the day before because the flavors all come together when it sits in the refrigerator. This is another simple basic recipe that tastes so good! I have made it this way since I started cooking.

Boil and drain your macaroni. Place the cooked macaroni in the refrigerato for about a half hour to cool down the macaroni.  Add the salt & pepper, diced celery and chopped hard boiled eggs.

Add Miracle Whip to your taste. Mix together and top with hard boiled egg slices. Garnish with paprika and refrigerate until ready to use.

Ingredients

1# elbow macaroni

2 stalks celery, rinsed and diced

4 hard boiled eggs, diced

1/2 tsp salt or to taste

1/4 tsp pepper or to taste

1 cup Miracle Whip plus more if needed

2 hard boiled eggs, sliced

paprika for garnish

Directions

Boil pasta to desired tenderness. Drain completely and refrigerate until cool, about 1/2 hour. Add cooked macaroni to a large bowl. Add diced celery, chopped eggs and gently mix to combine. Add 1 cup Miracle Whip and mix. Taste to see if you need more Miracle Whip and if you do, add a little at a time until you get your desired taste. Top with the two sliced hard boiled eggs. Garnish with paprika. Cover and refrigerate until ready to eat.
