Chicken Salad Stuffed Tomato
Chicken salad stuffed into a fresh tomato on a bed of lettuce garnished with fresh basil from the garden …. yummy! You could do the same thing with tuna salad. So simple to make if you make your chicken salad with leftover cooked chicken. What I did is purchase a cooked rotisserie chicken from Sam’s Club. Sam’s Club has the best tasting rotisserie chicken and it costs about the same as an uncooked chicken. I get many meals out of one chicken since it is just my husband and me.
Start with a large, ripe but firm tomato and scoop out the insides.
Take your favorite prepared chicken or tuna salad and fill the tomato.
Place it on a bed of lettuce, garnish with fresh basil and enjoy!
