Mini Chocolate Covered Frozen Bananas
Keep in mind these Mini Chocolate Covered Frozen Bananas were made with the help from my six year old granddaughter. We had so much fun making these! We used milk chocolate chips instead of semi sweet chocolate chips because that’s what she wanted. I have never melted milk chocolate chips for dipping before. I have always used semi sweet and will in the future too. Maybe it was just me but I feel that semi chocolate chips melted are much easier and better for dipping than the milk chocolate chips. The milk chocolate chips didn’t get runny enough to just dip the banana in even after adding a tablespoon of shortening. We did better using a knife and spreading it on the bananas. Of course my granddaughter didn’t mind at all. She had more fun putting the sprinkles on and eating the frozen banana. I did cut each banana into four pieces because the grandkids are little and with the banana cut into four pieces, they have more Chocolate Covered Frozen Bananas to eat and they are just the right size.
One thing you will want to use is a double boiler. Now you don’t have to use one as you can melt the chocolate chips in the microwave by stirring every few seconds. I just find it easier with the double boiler because I leave the top pan with the chocolate in it sitting over the hot water while I am dipping to keep the chocolate hot and melted.
Not too many ingredients needed to make Chocolate Covered Frozen Bananas.
Place a pop sickle stick into each banana piece.
Put water in the bottom pan of a double boiler. Bring to a boil and add top pan.
Place chocolate chips into the top pan of the double boiler. Stir constantly until no more chips remain and chocolate is creamy and runny.
Cover the bananas in chocolate and immediately sprinkle with colored sprinkles, nuts or whatever you would like. Place on a freezer safe pan covered with a sheet of waxed paper and place into the freezer until the bananas are frozen.
Remove from the freezer and dig in!
Mini Chocolate Covered Frozen Bananas
Ingredients

2 large firm but ripe bananas
1 cup semi sweet chocolate chips
1 Tbl shortening, optional
8 pop sickle sticks
Sprinkles or nuts, optional
Directions
Peel and cut bananas into 4 pieces each. Push a pop sickle stick 1/3 of the way into the banana piece. In a double boiler put water in the bottom pan making sure the water doesn’t touch the top pan but close to it. Boil water over medium heat. Pour chocolate chips into the top pan and place top pan onto bottom pan. Stir constantly until chocolate is creamy with no lumps. Remove both pans from the heat and place on a hot pad. If it is not runny enough for dipping add and melt 1 Tbl shortening into the chocolate. Leaving the chocolate pan on top of the hot water pan keeps the chocolate melted. Dip, roll or spread chocolate on banana pieces. Immediately sprinkle on nuts, sprinkles or whatever you would like. Place chocolate covered banana with the stick facing upright on a wax paper covered flat dish that can go into the freezer. Place the dish in the freezer until the banana is frozen.
