Marinated Mushrooms
I don’t know what I like better, cooked mushrooms or Marinated Mushrooms. I used to always buy Marinated Mushrooms from the store and they were so expensive. Now I make my own and they taste just like the ones I used to buy. I wait until they go on sale and buy a few containers just for this recipe. They don’t last long because I can’t stop eating them. These are very simple to make and a great addition to any menu.
Start by popping the stem off of the mushrooms and rinsing all of the dirt off. Drain well.
Lay them on a cutting board and chop into bite size pieces but leaving them a little on the larger size.
Boil about 6 cups of water. Add cleaned, cut mushrooms and boil for 4 minutes.
Meanwhile, in a bowl, mix the rest of the ingredients. Stir until the sugar is dissolved. You can even microwave for about 15 seconds on high if you want to get it dissolved faster.
Once the mushrooms are done cooking, drain well and add to the bowl, mixing well. Cover and refrigerate, stirring at least once a day for the next two days. Remove bay leaf. Stir again before serving.

Ingredients
1# mushrooms
1/4 cup olive oil
1/8th tsp ground (or 1 fresh sprig) thyme
1 bay leaf
1 tsp salt
1/2 tsp red pepper flakes
1/2 tsp dried minced garlic
2 Tbl white vinegar
2 tsp sugar
1 Tbl lemon juice
Directions
Pop the stems off of the mushrooms and clean the mushrooms with water. Cut the large mushrooms into quarters and the small mushrooms in half. In a medium pan over medium heat place mushrooms and stems in boiling water for four minutes and drain well. In a medium bowl mix the rest of the ingredients until the sugar is dissolved. I put the bowl in the microwave for 15 seconds to dissolve faster. Add mushrooms and stir. Cover and refrigerate stirring at least once a day for the next two days. Stir before serving.

Great question! It is my personal preference because I do not peel my mushrooms. Boiling them helps break down the outer layer so that the marinade can penetrate them faster. It also kills any bacteria that may be on them from being handled by other people.
