Egg Salad Sandwich

My favorite thing to make after Easter, with all those left over colored hard boiled eggs, is an Egg Salad Sandwich. I like that I can peel two eggs and have just enough for a sandwich. A lot of people like mustard, relish etc added to their Egg Salad, which is fine, but not me. I like it simple so that all I taste is the egg salad itself. I only use three ingredients when making my egg salad which is egg, Miracle Whip and salt. I also like it on Italian Bread because it holds the egg salad without collapsing. Try it on a large lettuce leaf, another one of my favorite ways to eat egg salad. So don’t throw out those leftover eggs, they should be good for up to a week, make yourself some Sandwiches!

Place your peeled hard boiled eggs into a bowl. Using a pastry blender, chop eggs into small pieces.

Add enough Miracle Whip and salt to your taste. Mix until combined and place on your Italian Bread.

Now dig in!

Ingredients

2 hard boiled eggs

Miracle Whip and salt to taste

2 slices Italian Bread

Directions

Place peeled hard boiled eggs into a bowl. Using a pastry blender or fork, chop egg into small pieces. Add enough Miracle Whip and salt to your liking. Place on the bread or a large piece of lettuce and enjoy!
