Broccoli Salad

One of my favorite vegetables is broccoli. This recipe has a great combination of broccoli, bacon, cheese and a wonderful and sweet tasting mayo dressing that is homemade. Another quick and easy recipe that can be made the day before or just a few hours before serving.

Begin by washing the broccoli. Cut the florets of the broccoli into small pieces. Add the bacon and cheese and mix until combined.

Make the dressing: Combine the mayo, vinegar and sugar. Whisk until sugar dissolves, I let it sit a few minutes and then whisk again. Pour over the broccoli and using a large spoon, mix gently until everything is coated with the dressing.

2 large heads broccoli

1/2# bacon, cooked and crumbled

1-1/2 cup shredded cheddar cheese

2-1/2 Tbl vinegar

1 cup mayonnaise

1/3 cup sugar


Wash broccoli and cut off the florets. Cut the florets into small pieces. In a large bowl combine broccoli, bacon and cheese. In a small bowl combine mayonnaise, vinegar and sugar. Whisk until the sugar dissolves, letting it sit a few minutes to dissolve if necessary. Pour over the broccoli mixture. Using a large spoon, carefully mix the dressing into the broccoli mixture making sure everything gets coated. Cover and refrigerate until ready to use. This can be made the night before if you wish. Toss again just before serving.
