Slow Cooker Beef Stew

What a beautiful day it was, a little chilly, the sun was shining and Spring was in the air. My husband started getting the yard furniture out and the lawnmower ready. I took my client to the lighthouse where we looked out over the lake and listened to the waves crashing against the rocks. What a great day for a slow cooker meal. Just prepare the entire meal in the morning, off to work and supper is ready when you get home. I just love Beef Stew. All the flavors just compliment each other and it always seems to turn out delicious!

Slow Cooker Beef Stew

1 bay leaf

1 tsp Worcestershire Sauce

3-14 oz cans beef broth

1 onion, diced

4 medium potatoes, peeled & cut into 1″ pieces

3 celery stalks, cut into 1″ pieces

4 carrots, peeled and cut into 1″ pieces

parsley for garnish, optional

In the slow cooker, mix flour, salt, pepper and garlic powder. Place meat in slow cooker and toss with flour mixture. Add the rest of the ingredients except parsley. Cook on high for 4 hours or low for 8 hours or until veggies are tender. Remove bay leaf and garnish with parsley, optional.
