Taco Salad

Here is my version of Taco Salad. I used ground beef in this picture, however, if you want to make it even healthier trade off the ground beef with ground chicken or ground turkey. With the taco flavoring in the meat, you can’t even tell it’s not ground beef. If you wish, you can break up taco shells and sprinkle them over the top of your salad. You also could use tortilla chips. I personally love it without the shells or the chips. Use Taco Sauce as your salad dressing which will bring all the flavors together.  We eat this as a meal and let me tell you, it is filling!

Ingredients

1# ground beef, turkey or chicken

One 1-1/4 oz. pack or 2 TBS Taco Seasoning Mix

3/4 cup water

1/4 cup taco sauce

1-8 oz. can tomato sauce

2 TBS dried minced onions

2 cups shredded Mexican or taco blend cheese

cherry tomatoes, sliced in half

2 green onions, sliced into small pieces

1 head lettuce, chopped

taco sauce for salad dressing

broken taco shell or tortilla chips (optional)

Directions

In a large fry pan over medium heat cook and crumble the ground beef until no longer pink, drain grease. Add the taco seasoning mix and stir into the ground beef. Add the water and 1/4 cup of taco sauce, stir. Heat until hot and then simmer, uncovered for 10 minutes. Meanwhile, mix tomato sauce and dried minced onions, set aside. Once 10 minutes are up, add the tomato sauce and onions mixture to the meat mixture. Continue to cook until meat mixture is thick enough to eat with a fork. This won’t take very long. Remove from the heat. Put the lettuce on a plate, place the meat mixture in the center of the lettuce. Add cheese, tomatoes and green onions. Top with taco sauce and dig in!
