Green Beans With Bacon

Fresh green beans are delicious just as they are but add bacon, onion, salt and pepper and they become amazing! I always have bacon cooked and chopped in my freezer thanks to my husband. I just let him know when my stock is getting low and he cooks up another 2#’s for me. That way I can add it to any dish in a fraction of the time. For this dish you could fry your onion with your bacon if you don’t have it already prepared. Have you ever tried adding vinegar to your fresh green beans? We do it every time and the combination of the beans with the bacon and onion with tangy vinegar is so good. Give it try.

Green Beans With Bacon

Ingredients

1# fresh green beans

1/4 onion, sliced or diced

1/2 cup bacon, cooked and chopped

salt and pepper to taste

Directions

Wash beans and cut the tips off. Cut beans in half. Boil about 4-5 quarts of water over medium heat and add beans. When the water returns to a boil, lower heat to a simmer. Simmer until tender. Drain and mix in the bacon, onion, salt and pepper.     http://www.InDianesKitchen.com

  1. That’s an interesting idea about keeping cooked bacon frozen and ready to add for flavoring. I wonder if it would also work well with vegetarian bacons?
