Baked Beef Taquitos
Taquitos are another one of my favorite foods to make and eat. They are fun and easy to make. I make a lot of them at once and freeze them. I take them out of the freezer, microwave them in less than 2 minutes and enjoy a quick meal. You can use the same basic recipe but use chicken or turkey instead of ground beef if you wish.

Ingredients
2 TBS taco seasoning
1 tsp sea salt
1 tsp pepper
1# ground beef
10 oz. can diced tomatoes with green chili’s
4 oz. shredded pepper jack cheese
16-6″ corn tortillas
Directions
Preheat oven to 400 degrees. Line a baking sheet with foil and lightly spray with cooking spray. In a frying pan, cook ground beef over medium heat until no longer pink, drain grease. Add taco seasoning, salt, pepper and tomatoes to ground beef mixture and mix well. Pour ground beef into a large bowl and add cheese, mixing until cheese melts. Place four tortilla between two paper towels on a plate. Microwave for 1 minute on high. Take one out at a time keeping the remaining tortilla covered with the paper towel. Place warm tortilla on a clean plate. Place about 2 rounded TBS of ground beef mixture 1/3 of the way up from the bottom of the tortilla. Roll from the bottom as tight as you can without tearing the tortilla. Place filled tortilla on a foil lined baking sheet seam side down. Repeat until all of the ground beef mixture is used up. Lightly spray the tortillas with cooking spray. Bake for 15 minutes. To freeze place cooled tortillas on a clean baking sheet, covered with waxed paper, without tortillas touching each other. Cover with another piece of waxed paper. Place in the freezer until frozen. Remove from the freezer and place in a freezer bag and return to the freezer. To cook, place two frozen tortillas between paper towel on a plate and microwave on high for one minute. Turn over and microwave another 30 seconds to one minute or until hot. http://www.InDianesKitchen.com

As a big fan of Mexican, I love the idea of freezing them. I was curious about the basil in your photo. The one time I experimented with adding some to my enchiladas, it made them pretty much inedible! Nothing but fresh coriander and parsley from then on 🙂

Hi Nicholas! I do not have basil in the recipe I just used it as a garnish.
