Cheesy Breakfast Burritos

I love making food that can be put into the freezer for an easy and quick hot meal. I keep my freezer stocked with a huge variety of food like Burritos, Pierogies, Egg Rolls, Pot Stickers, Crab Rangoon and so on. I make these burritos for my husband to eat for breakfast. They are ready from the freezer to his plate in less than 1-1/2 minutes. Filled with sausage, onion, egg, cheese and hash browns they are a complete meal and oh so good.

Cheesy Breakfast Burritos



2# breakfast ground sausage

2 medium onions

24 medium eggs

1/2 cup milk

30 oz. frozen hash browns

4 TBS oil, more if needed

2 cups shredded cheddar cheese

40 – 6″ flour tortilla shells

Salt and pepper to taste


In a large pan over medium heat, cook the sausage and onion until sausage is no longer pink and onion is translucent. Remove from the heat and drain the fat. In a large pan over medium heat, put oil in the pan and once hot add frozen hash browns. Salt and pepper to taste and cook until almost brown. Remove from the heat. You do not want these to be crispy, just cooked through. In a large bowl, add eggs, milk, salt and pepper and whisk until combined. Pour the egg mixture into a large pan and cook on medium heat until all of the egg mixture is cooked through. Remove from the heat. Do not over cook. Let eggs cool for a few minutes. In a large bowl combine cooked sausage, hash browns, cheese and egg mixtures. Using a large ice cream scoop, place one level scoop on a tortilla shell. Roll mixture up and tuck in the sides by gently pushing them in with your finger. These are now ready to eat! However, since they make 40, I wrap each tortilla in parchment paper and place them in a freezer bag. Once frozen, remove one from the freezer bag with the parchment paper left on and microwave frozen for 1 minute, turn and microwave 20 seconds more or until hot.
